Recipe for three portions

Ingredients

1 spaghetti squash
25 jumbo Shrimp
1 small onion
Leek and green onions (as much as you want)
1 clove of garlic
½ cup of organic coconut milk
SEASONINGS: cumin, basil, oregano, salt and black pepper
¼ cup of water
1 teaspoon of oat flour

Preheat the oven at 400F

Cut the spaghetti squash in half and using a spoon, scrap out the seeds from inside the squash, then spray it with PAM (coconut or olive oil) and sprinkle it with a pinch of salt and black pepper

Put it on a tray upside down (both pieces) and bake them for about 30 minutes

While the spaghetti squash is cooking, chop the garlic, onion, leek, green onion into little pieces

Throw the veggies on a sprayed frying pan and stir-fry for about 5 minutes

Add the shrimp and season it with cumin, oregano, basil, salt, and pepper (to taste)

Add the coconut milk and ⅓ of water, mix and cook for 5 more minutes

Then, on a separate cup, mix ¼ cup of water with the oat flour. Pour it into the shrimp, mix and let it get thick.

When having a creamy consistency, turn it off.

Take out the squash out of the oven after 30 min and let it cool down for a little bit.

With a fork, pull the squash flesh from the peel to separate the flesh into strands

If the noodles are too crispy for your taste, put them in the microwave for 5 more minutes

Then, add the noodles to the shrimp sauce, mix, and serve.
