Description

In honor of Taco Tuesday, I bring you this potato and egg breakfast taco recipe, a high carbs meal for those heavy lifting days when you need more power.

Ingredients

2 small Ezekiel tortillas (you can find them in the healthy section at the grocery store)

1 whole egg and 2 egg whites

3 tiny potatoes
Onion, green pepper, etc (any veggie you'd like)

Seasoning (Mrs. Dash or Flavorgod )

Hot sauce or Sriracha

Directions

Cut the veggies and the potatoes in little pieces.

Throw them in a sprayed hot frying pan on medium and let it cook until the potato gets soft (about 5min).

Add the eggs, seasoning, and mix well.

Turn it off when the eggs and potatoes are well cooked.

Take the tortillas and heat them up in the microwave for 30 seconds.

Put all together as shown in the picture and add some hot sauce/Sriracha on top.
