Ingredients

½ ripe plantain
1 while egg and 2 egg whites
Onion, green/red bell pepper, tomato (as much as you want)
Seasonings: Black pepper and Mrs.Dash

Directions

Peel off the plantain and put it in the oven at 375F for about 20 minutes or until it gets brownish.

Chop the veggies into little pieces and throw them on a sprayed frying pan.

Stir and let them cook for about 5 minutes.

Add the eggs, mix and cook 5 more minutes.

Take the plantain and open it up in the middle, then add the scrambled eggs.
