Plantain Balls Stuffed with Ground Turkey

Description

Since I’m a plantain lover, I like to experiment and make new recipes using plantain. I’ve done meals for breakfast mostly, but this time, I’m bringing you a lunch idea:  Plantain Balls Stuffed with Ground Turkey

Ingredients

½ ripe plantain

2.8oz ground turkey

Onion, green pepper, leek, yellow bell pepper (any veggie you’d like)

1 egg white

¼ cup of almond flour

1 clove of garlic

Paprika

Seasoning (Mrs Dash, Flavorgod, etc)

Preheat the oven at 400F.

Cut the plantain in half and peel it off.

Put it in the oven until it gets brownish and soft (I never notice the cooking time for the plantain).

When done, take it out of the oven and smash it to make a purée.

Cut the veggies in little pieces and throw them along with the garlic on a sprayed pan and let the onion get caramelized.

Add the ground turkey, seasoning, paprika to give some color and 2 tablespoons of water.

Let it cook and dry for about 5 min.

Take the plantain and make a ball, then form a flat rounded shape like a tortilla and fill it with the ground turkey previously made.

Close it until making a stuffed ball then dip it into the egg white and cover it with almond flour. Put it on a tray and inside the oven on 400F for about 20 min or until it gets crispy.

Tip: if you are a Sriracha fan, this would be a great dipping sauce for the plantain ball. Otherwise you can also try it with mustard.
