Oatmeal with Blueberries and Veggie Omelette

Description

Breakfast of champions – I don’t usually eat oatmeal because I’m not a big fan, but finally I found a way that hits the spot.

Ingredients

OATMEAL WITH BLUEBERRIES
1 cup of unsweetened almond/cashew milk (The brand is Almond Breeze, my favorite)

⅓ cup of whole oats

1 handful of blueberries
1 tablespoon of coconut sugar

A few walnuts
- Cinnamon (to taste)

OMELETTE:

Onion, green pepper, leek (as much as you want)

2 eggs

Seasoning (Mrs. Dash or Flavorgod) to taste

Directions

OATMEAL: Put the milk in a saucepan on the stove and let it boil.

Once it's boiling, add the whole oats and let it cook for 10-15 min (depending on how thick you want it).

Add the coconut sugar, mix everything and turn it off.

Pour it into a bowl and add the blueberries, walnuts, and cinnamon on top.

OMELETTE: Chop the onion, green pepper, and leek into little pieces and throw them in a bowl.

Add the eggs and seasoning.

Mix all the ingredients and pour it on a sprayed frying pan and cover it.

Cook for about 5 min, then fold it and let it cook for 5 more minutes.

Serve along with your oatmeal
