Little Texan Carrot Cakes

Description

As a Texas resident, I wanted to show a little love to my home state and make some carrot cakes with the Texas state shape.

Perfect for a morning or afternoon snack!

Ingredients

4 eggs
1 cup of almond flour
1 tablespoon of almond milk
½ of shredded carrots
2 tablespoons of natural peanut butter
½ cup of ground flax seed
½ cup of coconut sugar
2 hand full of walnuts
1 teaspoon of baking powder
Half lime zest

Directions

Beat the egg first until forming a foam.

Add the peanut butter and mix.

Add the rest of the ingredients and keep mixing until you get a homogeneous mixture.

Pour it on a baking pan previously sprayed making a thin layer and put it in the oven on 375 F for 20 min.
