Description

What a better breakfast than pancakes? But this time, I took the same recipe as the spinach pancakes and replaced the spinach with carrots. Oh my god! this is heaven on a plate!

Ingredients

8 mini carrots
⅓ cup of oat flour
1 whole egg and 2 egg whites
1 tablespoon of flaxseed
1 tablespoon of stevia or coconut sugar
1 tablespoon of almond milk
1 teaspoon of baking powder
Nutmeg (to taste)

Directions

Throw all the ingredients in a blender until getting a homogenous mixture.

On a hot sprayed pan, pour the mixture and cook for 2 min, flip it over and cook for 1 min on medium. Done!!

Add some sugar-free syrup and crushed peanuts on top.
